Minnie Belle Eicher was born on 11-27-1923 at the family farm house in Sherman County Kansas, northwest of Brewster. She was the 4th of 6 children born to Oscar Eicher and Nancy Dillinger Eicher.
Minnie Belle attended country school for the early grades, then went to Brewster School. She did move to Goodland for the last half of her 8th grade year to help care for her elderly grandmother. In 1941, she graduated from High School in Brewster and was Salutatorian of her class.
On November 27, 1940 she was married to Irving Imhof at the courthouse in Russell Springs, Ks. Their first home was northeast of Brewster just 2 miles from Irving’s childhood home, where Irving helped with his father’s farm. While there, two daughters were born – Priscilla in 1941 and Diana in 1944.
In 1946, they moved to Colby where Irving was the bus mechanic for the school system, worked at Western Auto, and continued to help with his father’s farm. They moved to the Imhof family farmstead in 1950 to take over the farming. Three additional children were born – Ruth in 1952, Lowell in 1955, and Debra in 1959.
Irving passed away March 3, 1997 and the following summer Minnie Belle moved to Goodland. There she reconnected with childhood friend, Don Jones, and they were married on April 5, 2001 in Colorado. He passed away March 18, 2022.
Minnie Belle lived at Wheat Ridge Acres from October 2017 until September 2023 when she entered Topside Manor. At the age of 101, she passed away at Topside Manor in Goodland, Ks on October 16, 2025.
She was baptized on January 23, 1944 and was a charter member of Our Savior’s Lutheran Church in Brewster and participated actively in its endeavors. The church women’s group, Sunday School, and Bible School all were graced with her presence. She also played the organ for several decades in the worship services. Most of all, however, was her personal faith and loving devotion to our Triune God, which could be seen in even the smallest of actions.
Preceeding her in death were her parents; siblings – Dan Eicher, Viola Stephens, Carl Eicher, Helen Hannon, and Betty Hiegert; husbands – Irving Imhof and Don Jones; daughter Diana Imhof Jones.
Survivors include children – Priscilla (Ron) Daniels of Great Bend, Ks, Ruth (Alan) Snider of Tulsa, Ok, Lowell (Peggy) Imhof of Omaha, Ne, and Debra (Kenneth) Griffith of Goodland, Ks, 12 grandchildren, 28 great grandchildren, and 6 great great grandchildren.
When asked what professional ambitions she would have pursued, she said she either wanted to be a hairdresser or a nurse. Instead, she got married and had children – which allowed her to do both!
Minnie Belle verbalized that she wanted to live to be 100 like her grandmother, Minna Dillinger. Having reached that goal, people would ask her what her secret to longevity was. Her response was always, “I just keep breathing!”.
Additional ways she served others was being a supportive farm wife, loving mother and grandmother, booster of any Brewster function, DAR member, and a member of the Rebekah’s Lodge organization of Colby.
